Recipes in Colombia: Postre de Piña con Galletas

Eliana, Wilfredo’s sister, taught me how to make this delicious dessert during Santa Semana. It’s easy and refreshing. You stick it in the fridge and eat cold the next day. Here’s her recipe if you want to give it a try.

– 1 packet of salty saltines and one packet of saltines with sugar if available (if not, two regular salty saltine packs are fine)
– 1 pineapple
– 1/2 lb. sugar
– 1 packet of cloves
– raisins
– 2 egg whites
– 1 can condensed milk (100 gr.)
– 1 jar of cream (50gr)

Chop the pineapple and toss into blender with little water until it’s liquid. At a medium temperature, cook with the sugar and bag of cloves until it is a syrup. Once ready, let stand for a bit.

Mix together condensed milk, cream and pineapple in syrup. In a flat pan or container, place a layer of crackers. Add the pineapple mix and then another layer of crackers and so on until the pineapple mixture is finished. The last layer should be crackers.

Then beat the egg whites until stiff peaks appear. Spread over the last layer of crackers and sprinkle some raisins on top.

Leave in the fridge overnight or for at least two hours before serving cold.


– 1 paquete de galletas de sal y 1 paquete de galletas dulcales
– 1 piña
– 1/2lb. de azucar
– 1 paquete de clavos
– Uvas pasas algusto
– 2 claras de huevos
– 1 tarro de leche condensada (100 gr)
– 1 tarro de crema de leche (50 gr)

Picar la piña y licarla en la licuadora con poca agua, despues llevarla a cocinar con la media lb de azucar y el paquete de clavos dejar cocinar hasta que quede en almibar, dejar reposar una vez este listo.

Mezclar en un recipiente la leche condensada la crema de leche y la piña en almibar, despues en un recipiente coloca una capa de galleta de sal y le hecha la mezcla anterior otra capa de galleta ducales y otra vez la mezcla de la piña y asi sucesivamente hasta terminar con una capa de galletas.

Luego bata las claras de huevo hasta quedar a punto de nieve, apliquele en la ultima capa de las galletas y agreguele las uvas pasas.

Lleve a la nevera por dos horas como minimo.

    looks yummy!! it’s def on my ‘to try list’ when i get to Canada as i will be on a long holiday myself then i think 😛 how big are those packets of saltines that go into it though, in grams?? have you tried to make it yourself already? 😉
